Ingredients
- 1 package (7 ounces) small shell ( or ring ) macaroni
- 1 cucumber, sliced or diced
- 1 carrot thinly sliced or shredded
- 1 small onion finely minced
- 1 c Miracle Whip ( or mayonnaise )
- 3/4 c sugar
- 1/4 c white vinegar
- salt and pepper to taste
Instructions
Bring 3 quarts of water to boil, add macaroni and cook for about 10 minutes.
Drain and rinse with cold water to cool.
In a large bowl, whisk Miracle Whip ( or mayo ), sugar and vinegar until combined.
Add cucumber, carrot and onion.
Stir well until the dressing coats the ingredients evenly.
Add the cooled macaroni and fold till combined.
Cover and refrigerate for 12-24 hours before serving, allowing the flavors to meld.
Serve chilled.
Notes
Optional additions: Diced celery, peas, your favorite chopped
herbs (like parsley or dill), cubed cheese (cheddar, Colby jack, etc )
