Place unpeeled potatoes in water, bring to boil, simmer 45 min ( until soft ).
Drain potatoes and return to pot, heat over low to evaporate moisture.
Heat butter, cream ( and milk if using ) till just bubbling.
Slice potatoes in half and place in ricer, remove peel from ricer ( or remove peel before Repeat for each potato into mixer bowl.
Add salt, pepper ( sour cream, garlic and parmesan if using ).
Pour hot liquid over, mix to desired consistency.
Skip cream and replace with milk for lower cal. version.
