Microwave water to boil.
Stir in honey, yogurt/buttermilk. When cooled to about 130, whisk in egg.
When cooled to 115, whisk in yeast. Allow to foam for 10 min.
Combine flour, salt and baking powder in mixer bowl.
Add liquid and stir to combine. Let stand to autolyse for 20 minutes.
Knead at medium for 3 minutes.
Form into ball, spray mixer bowl with oil and roll ball to coat.
Let rise for 2 hours.
Preheat cast iron griddle to high heat.
Divide ball into 4 pieces. Roll out each piece to 12x4 rectangle ( about 1/8-1/4 in thick ).
Spray olive oil over one side and place on griddle until large bubbles form ( about 2 min )
Reduce heat to medium to prevent burning.
Spray top with more oil and flip.
Brown second side for about 1 minute.
Repeat with remaining pieces.
For best bubbles, don't roll dough until ready to place on griddle.
A medium heat produces most bubbles without burning.
