Place chopped macadamia nuts on plate. Microwave on high for about 2-3 minutes.
Continue until browning starts checking every 30 seconds. Cool.
Preheat oven to 350.
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg, stir in the vanilla extract. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the macadamia nuts and white chocolate. Drop dough by heaping half Tbs ( small scoop ) on a silicone baking mat.
Bake for 11 minutes in the preheated oven, or until golden brown.
Makes one inch mini cookies.
