Ingredients
- Cake:
- 1 1/2 c chopped dates
- 1 c boiling water
- 1 c sugar
- 1 stick unsalted butter ( 8 Tbs )
- 3 large eggs
- 2 tsp vanilla
- 2 c flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- Topping:
- 1 1/2 c brown sugar
- 3 sticks unsalted butter - softened ( 24 oz )
- 1 c heavy cream
- 1 Tbs vanilla
- 1/2 tsp salt
- 1/4 c crushed toffee bars or toffee chips - garnish
Instructions
Preheat oven to 350
Spray bundt pan with cooking spray
Place dates in bowl, pour boiling water over and let sit 10 minutes
Cream sugar and butter in mixer, when smooth add eggs one at a time.
Add vanilla.
In medium bowl, combine flour, baking powder, baking soda and salt.
Add dry ingredients to wet and gently mix.
Add dates with liquid - mix lightly.
Add batter to bundt pan and bake 45 minutes.
Temperature should be about 200F. Add time if needed.
For topping:
Combine brown sugar, butter and salt in medium pot. Bring to a boil and then simmer stirring constantly until thickened ( about 10 minutes ), stir in vanilla.
Place cake on platter, Pour topping over and garnish with toffee.
Notes
Don't overbake or cake will be dry.
