Preheat oven to 325.

If using whole crackers - break in half, then in quarters. Place in processor with brown sugar. Pulse until fine crumb. Drizzle 1/4 melted butter over and pulse till combined.
Add teaspoons of water until crumbs stick together.

Press into 8-9 inch springform pan.

Pre-bake crust in heated oven for 10-15 minutes

Using same work bowl, add sour cream, vanilla sugar, eggs and vanilla. Blend one minute. Add cream cheese ( cut in 1 inch cubes ), blend until smooth. Pour 2 Tbs melted butter into feed tube while running. Pour into pan.

Bake 45 minutes or until tester comes out clean.

Refrigerate for 4 hours or overnite.

Notes

Cheesecake should come out of oven when center temp is 145-150.

Best if cream cheese and eggs are at room temperature.
Longer bake time may be needed if refrigerated and cake may crack.

If using unsalted butter, add pinch of salt before adding cream cheese.

Topping can be filling from cherry pie recipe.
