Title: Brioche Filled Doughnut Holes

Dissolve 1 tsp of sugar into water, add yeast. Proof for 10 minutes.
Whisk egg with milk and add proofed yeast.
Combine flour, salt and remaining sugar, add yeast mixture and stir to combine.
Rest for 20 minutes.
Using dough hook, knead for 8 minutes.
Add melted butter and knead for 3 more minutes.
Pour dough (dough is almost liquid ) into 4 cup container and cover.
Place in fridge overnight.
On floured counter, form dough into log. Cut into 8 pieces.
Make indentation in middle to hold 1 tsp filling.
Seal filling inside by pinching edges together. Roll into ball and set aside.
Let rise for 20 minutes.
Heat oil to 285 F ( 140 C ).
Place each ball in oil for 3 minutes, turn over and fry additional 3 minutes.
Can be done individually or batches.
Drain on paper towel and roll in sugar while still hot.
Cool for at least 15 minutes.
