Preheat the oven to 350 degrees
Place flour, salt and shortening ( and mahlab if using ) together in processor. 
Process for one minute
Add butter pieces to flour, process with 5 one second pulses.
Whisk water, egg yolk, and lemon juice together in a separate bowl
Pour into processor and pulse 5-10 times until dough partially comes together.
Dump onto a large sheet of plastic wrap.
Lift sides to bring dough together and then divide in half.
Cover with plastic wrap and roll into 8x8 rectangle
Press in bottom of 8x8 baking dish. 
Roll remaining dough to 8x8 for top cover and freeze.

Place apple slices in a large bowl; add sugar, starch, and spices. 
Toss apples to coat; spread over crust. Dot with Tbs of butter.
Cover apple filling with remaining crust.
Whisk egg white with 1 tsp of water and pint over top crust. 
Cut several slits into top crust for ventilation while cooking. 

Bake in the preheated oven until edges are browned and crisp, 45 minutes to 1 hour.
Combine powdered sugar, cream and vanilla with a pinch of salt to make icing.
Cool for about 10 minutes and then pour icing over to cover completely.
Cool to room temperature before cutting into squares, about 30 minutes.
