Preheat oven to 350 degrees. Use a 2x4-inch small loaf pan. Line with parchment paper and spray with non-stick spray to get out easily for slicing.
Mix sugars, Pie Spice and cinnamon together in a bowl.
Toss apples with sugar/spice mixture. Set aside.
Beat white sugar and butter together in stand mixer until smooth and creamy.
Beat in egg and vanilla extract.
Add flour, salt and baking powder, stir until blended. Mix milk into batter until smooth.
Pour third of the batter into the prepared loaf pan; add half the apple mixture, Repeat.
Pour the remaining batter over and top with remaining apples.
Lightly swirl apples into batter using knife or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 30 min, ( internal temp 205 ).
Glaze:
Mix powdered sugar, vanilla, salt and milk or cream together until well mixed.
Let cool for about 15 minutes before drizzling with glaze.
