Stovetop Stuffing Meatloaf

Ingredients

2 eggs
1/2 c water
1/2 c ketchup
6 oz box stove top stuffing
2 lbs ground beef

Instructions

Preheat oven to 350.
Line large loaf pan ( or 9x13 baking dish ) with parchment or non-stick foil.
Spray with cooking spray.
Whisk eggs, water and 1/4 cup ketchup until combined.
Add stuffing mix, mix till mix is coated.
Add ground beef, mix till combined.
Shape meat to loaf and place in pan.
Brush loaf with remaining ketchup.
Bake at 350 for 55 minutes.

Notes

For sweeter glaze, add 2 Tbs brown sugar to 1/4 cup ketchup before brushing over.

May need 2nd smaller loaf pan if it doesn't fit in standard loaf pan.
