Cook mushrooms in water until almost dry.
Add one Tbs butter and toss to coat the mushrooms and cook till browned.
Push mushrooms to side, melt remaining butter and add shallot, rosemary, salt and pepper. When softened, add wine and vinegar. Stir together and cook until glaze is reduced by half.
