Cover the potatoes with water and boil until they are soft. Drain, reserving potato water. Mash the potatoes and reheat the water. Add honey, ginger and flour to the potato. Pour the potato water over this mixture and beat until smooth. Allow to cool until slightly warm.

For starter, add yeast (dissolved in small amount of water) and allow the yeast mixture to rise.

One cup of yeast mixture is equal to one package of yeast, and will keep for two weeks in the refrigerator.

This recipe is enough for 2 cups. At the end of two weeks, put a cup aside and thoroughly wash out your refrigerator container. Place the cup of yeast mixture back in the container along with fresh potato-honey-flour food and allow to stand for an hour. Then refrigerate.
