Melt butter in saucepan with a little olive oil.
Add mushrooms, leeks, salt, pepper and seasonings. Saute 5 minutes.
Sprinkle flour over and cook 1 minute.
Stir in broth and simmer 20 minutes.
Use immersion blender or transfer to blender. Blend to fairly smooth.
Stir in cream, cook 5 minutes.
Serve with a sprinkle of chopped parsley and garlic croutons or crispy fried onions
