Preheat oven to 350.
Line baking sheet with silicone baking mat.

Line baking sheet with non-stick aluminum foil.
- or -
Spray baking sheet with cooking spray.
Place cream cheese in bowl, heat in microwave until it starts popping.
Stir in cumin ( and cayenne if using ). Add grated cheese and mix well.
Mix flour and 2 tsp creole seasoning in small bowl.
Place spoonful of cheese mixture into each pepper piece.
Roll each cheese filled pepper piece in flour mixture and to coat and set aside
In shallow dish, beat eggs, milk and 2 tsp. creole seasoning.
In another dish combine bread crumbs and remaining seasoning( about 4 tsp ).
Dip each piece in egg mixture, then dredge in breadcrumb mixture.
Place pieces on prepared baking sheet.
Bake until filling is runny and crust is browned, about 30 minutes.
Can be frozen and reheated as needed.
