Preheat oven to 350.
Cream butter and sugar together until smooth ( not grainy ).
Add eggs, one at a time.
Add bananas, salt and vanilla. Mix completely.
Add flour, baking soda, mix till batter starts to form.
Add chocolate chips, cherries and nuts ( if using )
Grease ( or line with parchment ) one large ( or 2 small ) loaf pans.
Pour batter in pan ( or pans ) - pans cannot be more than 3/4 full
Bake one hour for large pan or 45 minutes for small pans.

Insert a toothpick or cake tester into the center of the cake, it should come out clean, with no streaks of batter
