Preheat oven to 425.

Place 2 Tbs unsalted butter in an 8 inch cast iron pan.

Place all other ingredients (except fillings ) in blender and blend till frothy...about 2 minutes. ( Could also whisk by hand )

When oven gets to temp, place pan with butter in oven for 2 minutes ( until butter is completely melted ).
Remove pan and swirl to coat sides slightly.
Dump blended batter in pan
Bake 20 minutes or until puffed and light brown.
Reduce oven to 300 and bake additional 5 minutes.

Slice in half, drizzle with maple syrup and spoon warm filling over.
