Ingredients
- 3/4 c shortening
- 1 c sugar
- 1/4 c molasses
- 1 egg
- 2 c flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp cloves ( scant )
- 1 tsp ground ginger
- 1/2 tsp kosher salt
Instructions
Preheat oven to 375F.
Sift dry ingredients ( flour, soda and spices ) together.
Cream shortening,sugar,molasses and salt in mixer for 5 minutes, add egg and mix additional 3 minutes.
Add sifted dry ingredients, mix 2 minutes.
Shape in balls the size of walnut , roll in sugar and place on baking mat ( or greased cookie sheet ) 2 inches apart.
Using fork, press down lightly on each ball twice forming cross-hatch pattern.
Bake 8-10 minutes.
Notes
Butter flavored shortening can be used.
Balls can be made with #40 cookie scoop ( or 1 oz or 2 Tbs )
Cookies will be about 2 inches across.
