Carrot Cake Mrs Prof

Ingredients

2 c sugar
4 eggs
1 1/2 c oil
1 tsp cinnamon
1/2 tsp allspice
3 c grated carrots
1 tsp vanilla
2 c flour sifted
2 tsp baking soda
3/4 tsp salt
1 c walnuts chopped
Icing
8 oz cream cheese - softened
1/ 2 c butter - softened
2 tsp vanilla
3 1/2 c powdered sugar

Instructions

Preheat oven to 375.
Beat sugar, eggs and oil until light and fluffy.
Add remaining ingredients.
Stir to combine.
Pour into 9x12 buttered, floured 9x12 pan.
Bake 1 hour.

Combine icing ingredients and spread on cooled cake.

Notes

Original recipe called for "one box" of powdered sugar.
One pound box of sugar is about 3-1/2 cups.
