Preheat oven to 275.
Remove ribs from packaging, rinse and blot dry.

Optional : grill ribs for 7-10 minutes.
After cooling ( if grilled ) , rub in liquid smoke.
Sprinkle pepper, garlic, smoked paprika and sugar on both sides. Rub in.
Wrap in foil ( or use baking dish ) and place on baking sheet.
Roast at 275 for 3-3 1/2 hours.
Drain.
Optional: Set oven to broil. When glowing, broil ribs for about 5 minutes on each side.

Change oven temp to 325.
Spread on BBQ sauce on one side, roast 20 minutes, flip and sauce 2nd side, roast another 10 minutes.
Let rest for 10.

Notes

Instead of using foil, ribs could be cut to fit in multiple covered glass baking dishes.
